The best pie of 2014

Sometimes I get an idea and let it simmer for a while. This gives me the time to decide if it’s really worth the time and energy to pursue it. Other times I get an idea, all the ingredients are right there, the kitchen’s a mess anyway and I have the time. Those times are sheer joy and I jump in with abandon whenever they come. This pie, my favorite of 2014, is the tasty outcome of just such a moment. The idea hit when I was in the middle of the busiest baking time of the year, the week before Thanksgiving until the week after Christmas.

You want to know what the pie is, right? You want the recipe, right? Okay, okay, I’ll share just because I’m nice like that! Cranberry Custard is my favorite pie of 2014 and as far as I know, it’s an original idea. I checked all over the internet to find a pie like it and I really couldn’t.

To vent your fruit pie

You’ve got company coming over.  You want to impress them with a gorgeous, flaky, gourmet looking homemade pie.  As they say, the devil is in the details.  With pie this is truth.

If a cracked crust isn’t on your menu, may I humbly suggest venting your fruit pies properly will keep your crust intact.  As far as keeping your sanity intact when company is coming, you’ll have to figure that one out on your own!

iBake – Gluten-free Gooey Chocolate Chip Cookie Pie

This cookie has chew. It has texture. It has gooey chocolate goodness. The one thing it doesn’t have is gluten. I’m not gluten intolerant, but as a baker I’m always looking for sweets that will really satisfy those that are. This cookie pie gets 10 gluten-free satisfaction points.

iBake – Chocolate Bottom Peanut Butter Pie


I have had a seriously unquenchable craving for chocolate and peanut butter.  It all started when I made a batch of “healthier” chocolate peanut butter cups.  More about that recipe later.  Let’s move on to the reason for this pie post.  Three triple batches of peanut butter cups later and I was on the hunt for more chocolate-peanut butter combinations.  Technically – iDon’tBake for this pie.  That’s right, no baking!  Wait for it:   it’s also Paleo, gluten-free and some might say, healthy.  I don’t say it’s healthy.  I would say it’s healthier.  “Healthier than what?” you might ask.  Well, thank you.  I’m glad you asked!  Healthier than a lot of things that don’t even taste this good.
